Liquorice has a long history of traditional use for soothing the gastrointestinal tract.
To make a delicious liquorice root tea, put 1 to 2 teaspoons into a cup or mug and pour on boiling water. Cover the cup to keep the flavour and volatile oils in the tea and brew for 5-15 minutes. Strain and enjoy.
For maximum potency, make a decoction by placing the root in a saucepan with a cup of cold water and bring to the boil with the lid on. Simmer for 10-15 minutes.
